Dear Uncle Jan from down the street always tell me about his days in the Bush War during the early 1980′s on the border of what then used to be known as South West Africa (then a South African protectorate) and Angola. He grew up in KwaZulu-Natal, and once told me about this treat his mother used to make him and his brother when they were little. She used fresh pineapple, warmed it on the Aga stove, and dusted it with fine red chilli powder. I mentioned to Uncle Dan that I recalled similar pineapple-snacks on a stick being sold on the Durban beach by locals in small stalls down the pier during one family holiday in the late 90′s. Uncle Dan’s fresh chillies were roasted and blended with fresh pineapple to create this fiery jam. My ode to Durban!
